Buffalo Chicken Sweet Potato Casserole

Healthy easy recipe for families or meal preps! Easily made Paleo!



This recipe has become a meal prep favorite for my husband and I. It holds up well in the fridge, its easy to reheat and great for serving a crowd on a budget. There is something so comforting about a casserole. True American comfort food at its finest.


But comforting doesn't have to mean unhealthy. This meal is packed with fiber, healthy carbs, healthy fats and tons of protein! In this version I've used Buffalo sauce but I have replaced the Buffalo with Sugar Free BBQ sauce and it is just as good! Perfect for kids or picky eaters.


I use Costco rotisserie chicken because they are the biggest and juiciest in my opinion. I poke holes all through out my sweet potatoes and bake them at 375 until nice and tender.



While my potatoes are baking I shred the rotisserie chicken and add some extra seasonings. Usually garlic powder, onion powder and salt. Or ranch dried seasoning is awesome if you have that.



Once the potatoes are nice and soft I squeeze them into a bowl and mash everything together. With my favorite healthy Buffalo sauce, the Primal Kitchen Buffalo!



Then I just top with my favorite fat free cheese and bake at 375 until everything is warmed through. Because the potatoes and chicken are already cooked you're really just looking for warmth and melty delicious cheese! Usually around 25-35 minutes depending on your oven.






Ingredients:

- 3 Large Sweet Potatoes

- 1 whole Costco Rotisserie Chicken

- Primal Kitchen Buffalo Sauce (1 jar)

- 1 & 1/2 cup of your favorite fat free cheese

- Garlic Powder, Onion Powder, Salt, Pepper, Ranch Seasoning ( any of these to taste. Season with your heart)

- Greek yogurt Ranch dressing or Blue cheese crumbles for topping.

- Fresh Spinach for serving.



Directions

Step 1: Wash and poke holes all over sweet potatoes. Bake at 375 until fully cooked through and fork tender.


Step 2: While Potatoes are baking shred rotisserie chicken and place in a bowl with 1 cup fat free cheese of choice, and what ever extra dried spices you prefer. My favorite is dried ranch spice.


Step 3: When Sweet potatoes are soft, squeeze the soft inner parts of the potatoes into the bowl with the chicken and combine with your favorite buffalo sauce. I prefer almost an entire jar of the Primal Kitchen sugar free and dairy free buffalo sauce. But I do like things spicy. If you like less spice use less sauce.


Step 4: put everything into a casserole dish and top with remaining fat free cheese.


Step 5: Bake at 375 for about 25 to 35 min or until fully warmed through and the cheese on top is melted.


Step 6: Serve on a bed of fresh spinach topped with blue cheese, fat free ranch, or Greek yogurt ranch dressing.


Step 7: Enjoy!
